Spinach Pasta Recipe

Quick and easy vegan pasta lunch recipe.


  • 160g of spinach pasta
  • 1 can of chickpeas (400g, in water)
  • 1 cup of broccoli
  • ½ cup of carrots
  • ½ cup of red onions
  • ¼ cup of dill
  • ¼ cup of olive oil
  • ¼ cup of balsamic vinegar
  • 1 clove of garlic
  • 1 tsp of dill
  • Pinch of salt
  • Pinch of black pepper


  1. Cook your pasta (for the recommended time on the packet), steam the carrots and broccoli for 15/20 minutes. Whilst these are cooking, drain your chickpeas. Once the pasta and vegetables are cooked put them aside to cool, or rinse in cold water
  2. In a mixing bowl, add the pasta, carrots, broccoli, red onion, chickpeas, ¼ cup of dill and mix. Set aside whilst you prepare your dressing
  3. In a jug/bowl, add olive oil, balsamic vinegar, the garlic glove (once chopped or crushed), 1tsp of dill, salt, black pepper and stir until all the ingredients are mixed together
  4. Drizzle the dressing over all the ingredients in the mixing bowl, give it a stir, and you’re done!


  • You can use alternative ingredients to experiment. For example, you can use basil instead of dill
  • This recipe filled three lunch boxes! This is handy if you don’t always have time to prepare lunch
